Golden Turmeric Healing Bowl

Ingredients

  • 1 cup quinoa, cooked
  • 2 cups broccoli florets
  • 1 cup shredded purple cabbage
  • 1 carrot, julienned
  • 1 tbsp olive oil
  • 1 tsp fresh turmeric, grated
  • 1 tsp fresh ginger, grated
  • ¼ tsp black pepper
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • Sea salt to taste

Instructions

  1. Cook quinoa according to package directions and set aside.
  2. Steam broccoli florets for 4 minutes until bright green and tender-crisp.
  3. Warm olive oil in a small pan. Add turmeric, ginger, and black pepper. Cook 30 seconds until fragrant.
  4. Whisk tahini with lemon juice and 2 tbsp warm water until smooth.
  5. Divide quinoa between two bowls. Top with broccoli, cabbage, and carrot.
  6. Drizzle with the turmeric oil and tahini dressing. Season with sea salt.

Chef's Notes

Turmeric is shown in research to have anti-inflammatory properties. Pair with black pepper to boost absorption.
